Scrumptious Strombolli

I made this the other night and it was so easy and tastey! I added green and red pepper and marinara sauce. You can also add any kind of deli sliced meat. YUM!

Strombolli Recipe from my mom - 'I have tried my own pizza or bread dough recipe, but find Bridgeford Bread Dough works the best for Stromboli. BUT...follow the defrosting instructions very carefully and when you look for it at the grocery store...look for small and well shaped ones (3 in a pkg.), the ones that look fat or hanging over in the pkg. have been defrosting-~Rosemarie
1 Frozen Bread Dough
1/4 lb thin sliced pepperoni (25 pieces)
4 oz mozzarella
garlic powder
oregano
When dough is ready, press out with fingers to about 12"x16" piece
Brush very lightly with milk
Lay pepperoni 1-1/2" from top and sides 5 across and 5 down
Place mozzarella on top of pepperoni
Roll from long side, pinch seam, fold ends under, lay on pan seam side down
Sprinkle well with garlic powder and orageno
Bake 400 degrees for 25-30 minutes

Awesome Dessert :)

Great dessert for the fall! I am going to be making this for a party this week!



*_Caramel Apple Bars_*



BASE AND TOPPING

2 cups all-purpose flour

2 cups quick-cooking oats (don’t substitute)

1 1/2 cups packed brown sugar

1 tsp baking soda

1 1/4 cups butter or margarine, melted

FILLING
1 1/2 cups caramel ice cream topping

1/2 cup all-purpose flour

2 cups coarsely chopped peeled apples

1/2 cup chopped walnuts or pecans (optional)

Heat oven to 350ºF. Grease 15x10x1-inch pan ( I used 9x13) with shortening. In large bowl with electric mixer, beat base and topping ingredients on low speed until crumbly. Press half of mixture (about 2 1/2 cups) in pan to form base; reserve remaining mixture for topping. Bake 8 minutes.

Meanwhile, in 1-quart saucepan, mix caramel topping and 1/2 cup flour until well blended. Heat to boiling over medium heat, stirring constantly. Boil 3 to 5 minutes, stirring constantly, until mixture thickens slightly.

Remove partially baked base from oven. Sprinkle with apples and walnuts. Pour caramel mixture evenly over top. Sprinkle with reserved topping mixture.

Return to oven, bake 20 to 25 minutes longer or until golden brown. Cool on wire rack 30 minutes. Refrigerate until set, about 30 minutes. Cut into 8 rows by 6 rows.

High Altitude (3500-6500 ft): Bake at 375ºF as directed above.

Easy Chicken Meal

This is a highly recommended Chicken Parmesan recipe from a friend. Make sure to sautee the garlic in oil for about 20 min. on low-to get that yummy garlic flavor. This is a super easy meal!

Ingredients:
chicken breasts (skinless, boneless)
1/4 Cup Olive Oil
2 tsp. crushed garlic
1/2 cup parm cheese
1/2 cup italian breadcrumbs.

Directions:
On a plate mix the parm cheese and breadcrumbs.

Sautee garlic in olive oil until over low heat... to get the garlic flavor incorporated in the oil.

Take one chicken breast at a time and dip in heated garlic flavored oil, the coat with parm cheese/breadcrumb mixture.

Put in a 9x13 pan and bake on 425 for 30-35 minutes- chicken juices will be clear and breadcrumb mixture will be toasted.

I served this with a side of angle hair with garlic and a side of broccoli. :) The chicken is sooo good, a touch of garlic on it along with the "toasted" crumb mixture... YUM.

Healthy Recipes

New Recipes- Please note that the points are for Weight Watchers. I have not tried these yet but plan to :)

Cabbage and Beef Soup
1 lbs. lean ground beef
1/2 tsp. garlic salt
1/4 tsp. garlic powder
2 celery stalks, chopped
1 can (16 oz) Kidney beans (drained)
1/2 medium head cabbage, chopped
1 can (28 oz) tomatoes, chopped and liquid reserved can
1 tomato can water
4 beef bouillon cubes
pinch of sugar

In a dutch oven, brown beef. Add all remaining ingredients, bring to a boil. Reduce heat and simmer, covered for 1 hour. Makes 3 quarts
1 cup = 3 points



1 point chili
10 oz ground turkey
1 medium onion
2 (28 oz) can diced tomatoes
2 medium zuccinis, diced (I usually put 1 or 2 more)
2 medium yellow crookneck squash, diced (I usually put 1 or 2 more)
1 15 oz black beans, drained
1 15 oz beef broth
4 celery stalks, diced
1 green bell pepper, diced
1 1/4 oz package dry chili

Brown turkey and onion. Add all ingredients and simmer for 45 minutes.
1 cup = 1 point


No Bake Pumpkin Chiffon Pie
1 16 oz can pumpkin
1 small package sugar free vanilla pudding mix
2/3 cup dry non-fat milk powder
1 tsp pumpkin pie spice
1/2 cup water

Blend in 1/4 cup light whipped topping. Spread mixture in reduced fat graham cracker crust.
Spread 3/4 cup light whipped topping over filling and sprinkle with 2 TB pecans or walnuts.
6 servings = 5 points
8 servings = 4 points

Easy Recipes

Here are some fast and yummy recipes that I received from a great friend. They look really scrumptious and I love crock pot meals :)

Chicken Chalupas
1 (8 oz) bag Nacho cheese Doritos
4 cooked chicken breasts, cubed into 1/2 inch pieces
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 cup chicken broth
1 cup lite sour cream
1 (4 oz) can green chilies, diced
1 cup grated cheddar cheese

Grease 9x13 in. glass baking dish. Line with Doritos chips. Spread chicken on top of chips. Place cream of chicken soup, cream of mushroom soup, chicken broth, sour cream, and green chilies in blender (I just mix in a bowl instead of blender, and it tastes great). Blend until creamy smooth. Pour mixture over chicken. Sprinkle cheese on top. Bake in a 350 F oven for 40 minutes. Serves 4 to 6.


Easy Crockpot Beef Stew
1 lb beef stew meat, cut into cubes (Stater Bros. already have it cut) Do not brown, add water or salt, just put in bottom of crockpot
1 can Campbell's French onion soup
1 can Campbell's Cream of Mushroom soup
1 can Campbell's Tomato soup
you can use potatoes, carrots, celery, green beans, corn

Put stew meat in bottom of crockpot, add French onion soup and mushroom soup (do not stir) and tomato soup (do not stir). On top of 3 cans of soup, put your potatoes (cut up) and carrots. Still do not stir; as they cook, they will mix with soup and meat. I make corn on stove top so its crunchy. I also make mashed potatoes for leftovers. Cook on low all day (10 hours) or 3 hours on high and remaining hours on low.

Burrito Bar

Tonight I am making one of my favorite Rachael Ray Recipes, Burrito Bar. I will post a link to the recipe. It is full of fresh, spicy ingredients. I don't usually cook the chorizo with the chicken. But that is my personal taste. I make some fresh salsa to go with it and it is so yummy! The black beans are wonderful. This would be a great meal if you were going to have guests or just for your family. Again, this is no 30 minute meal for me. I usually make some of the items beforehand. If you like spicy food this is the recipe for you!

Toddler Breakfast


I have difficult time figuring out what to feed my toddler son. Here are some things I usually feed him for breakfast.
  • waffles (frozen)
  • pancakes (frozen)
  • cereal (Kix, Cherrios, Puffed Rice)
  • yogurt
  • fruit (mandarin oranges, apples, strawberries, blueberries)
  • cinnamon and sugar toast

Do you have any other ideas for breakfast? My son refuses to eat any kind of egg, bagel or banana. I always give him fruit with his breakfast. Please comment as to what you feed your toddler children. Thanks!

Rachael Ray Recipes

I love cooking Rachael Ray's 30 minute meals-however her meals take more like an hour or so to prepare. I watch her frequently on the Food Network and I get my recipes from their website. I also have one of her cookbooks cooking round the clock I love most of her italian dishes and soups. I love making her Chicken Stoup, Scudeni Kid's Fast, Fake-Baked Ziti, Urban Cowboy Turkey Burgers. I love the way she uses fresh ingredients and herbs. She also has several nice recipes for kids like Worms and Eyeballs. You should really check out this website. I like the fact that you can watch her make the meal on T.V. and then print the recipe for that day off of the Food Network website and make it yourself. I do not consider myself a great cook but I love to try making new things :)
